Oil from a single variety of olive is rare in Italy. The usual practice is to blend oil from different varieties of olives to create the desired balance of qualities.
This oil is cold pressed from Grignano variety olives only. It is not well known outside the Veneto region, where it is considered a delicacy. The texture is fine like the Largo di Garda oil, but with a slightly less complex and more distinct flavor.
This is the first time this type of oil has been offered in the U.S.
