In the Chianti Hills of Tuscany, Isabella Devetta grows an antique variety of rose called "Gallica." Each May she harvests the rose petals in the morning, when their fragrance is at its height, and adds them to spring water, organic cane sugar, and a dash of organic lemon juice. She then cooks the mixture down to a rich syrup in her workshop located right on her farm. Use as a sweetener in tea, water or Indian lassi yogurt drink. Pour over ice cream, shaved ice, crepes, cheesecake or panna cotta. A wonderful ingredient for ice creams and sorbets, as well as a mixer in white wine and champagne. Magliano Organic Rose Syrup was #26 in Saveur Magazine's 2005 annual Saveur 100 list. Certified organic by QC&I.
